Adobo is an easy to make Filipino chicken recipe spiced up with black peppercorns. This is a family recipe!
3lbs boneless chicken thighs (with or without skin, pictured here is without but I highly recommend it with!)
4 cloves of garlic, minced
1/2 cup soy sauce
1/2 cup water
1/4 cup vinegar
2 tablespoon peppercorn
3 bay leaves
1 tablespoon fish sauce
- If you are using chicken with skin: start by lightly frying the chicken. Heat 2 tablespoons of oil in a shallow pot or pan over medium heat. Cook the chicken until browned, then flip and brown the other side. Transfer chicken to a plate and clean out your pan.
- Using the same pan, add water, vinegar, soy sauce, garlic, fish sauce, peppercorn and bay leaves. Bring the mixture to a boil, then place the chicken into the pan.
- Reduce the heat to a simmer and cover for about twenty minutes. Once done, flip all of the pieces of chicken and simmer for another twenty minutes.
- Shred chicken and serve over rice with extra scoops of sauce if desired.
