Sausage Campfire Packs

Please note: Unless specially stated, all recipes are meant to be consumed by humans, not dogs like Cheddar :)

This easy meal is great for a quick lunch and can be cooked in the oven, on a grill, or even over a campfire!

  • 1 12oz package cajun andouille sausages (4 sausages)

  • 12oz trimmed grean beans

  • 1 lb baby red potatoes, quartered

  • 4 tablespoons butter

  • 2 teaspoons cajun seasoning

  • 1/2 teaspoon paprika

  • 1 teaspoon dried parsley

  • 1/4 teaspoon red pepper flakes

  • Customize to your taste! Optional add-ins:
  • Diced yellow onion

  • Diced bell peppers

  • Diced mushrooms

  • Cut four squares of aluminum foil and set them on a baking sheet. In a small bowl, melt butter in the microwave. Stir cajun seasoning, paprika, parsley, and red pepper flakes into the bowl.
  • In a larger bowl, combine 1 sliced sausage, 1/4 of the green beans, and 1/4 of the potatoes. Spoon 1/4 of the butter sauce mixture into the bowl and stir until well coated. Carefully pour the contents of the bowl onto an aluminum foil square and fold up into a packet. (It doesn’t have to be pretty, but make sure they are fully covered.) Repeat until you have four filled foil packets placed on your baking sheet.
  • Cook the packets in an oven preheated to 425 degrees for 18-20 minutes or on a grill for 12-15 minutes. Serve as-is or over rice for a more filling meal.
