
This easy meal is great for a quick lunch and can be cooked in the oven, on a grill, or even over a campfire!

Ingredients
1 12oz package cajun andouille sausages (4 sausages)
12oz trimmed grean beans
1 lb baby red potatoes, quartered
4 tablespoons butter
2 teaspoons cajun seasoning
1/2 teaspoon paprika
1 teaspoon dried parsley
1/4 teaspoon red pepper flakes
- Customize to your taste! Optional add-ins:
Diced yellow onion
Diced bell peppers
Diced mushrooms

Directions
- Cut four squares of aluminum foil and set them on a baking sheet. In a small bowl, melt butter in the microwave. Stir cajun seasoning, paprika, parsley, and red pepper flakes into the bowl.
- In a larger bowl, combine 1 sliced sausage, 1/4 of the green beans, and 1/4 of the potatoes. Spoon 1/4 of the butter sauce mixture into the bowl and stir until well coated. Carefully pour the contents of the bowl onto an aluminum foil square and fold up into a packet. (It doesn’t have to be pretty, but make sure they are fully covered.) Repeat until you have four filled foil packets placed on your baking sheet.
- Cook the packets in an oven preheated to 425 degrees for 18-20 minutes or on a grill for 12-15 minutes. Serve as-is or over rice for a more filling meal.
